把鸡肉放在冷水中浸泡30分钟,之后,沥水,放在热油中翻炒。(先把锅放在火上烧热,时间长一点,然后再放油在烧一会,这样防止鸡肉粘锅)

炒鸡至金黄色,之后加入辅料的葱姜、八角、干辣椒,继续翻炒,直到炒出香味。(如果感觉有些鸡肉的腥味,还可以放些料酒!)

然后放入滚开的水,让水的位置正好没过鸡肉的表面一点点就ok啦!!大火烧一会,马上放入刚才泡蘑菇的水。这样的目的是让汤汁更具有蘑菇的香味
