排骨剁小一些,易入味易蒸熟。

书上的调味比例是:排骨500g,豆豉10g其余调料适量,我家大厨放的豆豉比例比原方高,味道浓郁非常好吃,你可以根据口味调节豆豉的用量。

还有一种做法是不放生抽的,蒸出来是排骨的本色,味道也非常好,所以放不放生抽都可以。
